The Local Butcher Denver Central Market

The Denver Central Market was our inaugural location where we began our journey to provide Colorado residents the best, local, meat they could buy. Pasture raised beef, lamb, pork and poultry are available everyday, as well as a rotating variety of sausages and other unique items we create to make your at home meal the best possible. As time passed, we expanded our prepared foods to include Texas style brisket, pulled pork, and baby back ribs, to go alongside the famous Mom’s meatball sandwich and our Chicago style Italian beef (giardiniera and all). The Denver Central Market is a space like no other in this city, with an energy of a much bigger city than Denver. We love that we are able to be a part of such a unique development with a surrounding group of businesses that compliment one another and speak the same language, great food!

The Local Butcher is a full service butcher shop in The Denver Central Market providing Denver residents with USDA choice and prime beef, aged a minimum of 21 days for tenderness and flavor. Additionally, we carry a variety of pork, lamb, bison and poultry, as well as a plethora of homemade sausages. We serve two sandwiches daily, meatball and pulled Italian beef, with rotating soup options and the occasional sliced prime rib (call for daily specials).

The Local Butcher was established in 2016 inside The Denver Central Market. In 2019, we were able to expand to our inaugural brick and mortar store in Oneida Park in the Park Hill neighborhood.

Growing up in a family where the foundation for a great time meant all you needed was great food, great music and great people, Justin felt he would be able to extend at least one of these branches to the surrounding community by opening The Local Butcher. After spending six years in Los Angeles, he and his wife, Julia Lafranchise, moved to Denver to start a new chapter in their life. With family already in Denver, Justin and Julia knew Colorado was the ideal place for them and their future. While pursuing his MBA at The University of Denver, Justin began laying the foundations for his ideal butcher shop. When The Denver Central Market concept came across his desk, it fit right in line with his desires. In 2019, Justin took the next step in his dream by opening his first brick and mortar location in the Park Hill Neighborhood at Oneida Park.
