We make artisan breads using a 30-hour baking process. The only ingredients are organic, freshly-milled, local Kansas flour, water, sea salt and our natural wild yeast starter. Any other ingredients mixed into the dough (nuts, seeds, dried fruits, etc.) are almost exclusively organic. The bread comes out of the ovens with a crisp crust and a soft, custardy interior.

The ibis is a communal bird that loves to socialize and eat daily meals together. To us, that ritual is what bread is meant for. We are a passionate group of bakers and food-lovers in Kansas City who are excited about discovering flavor and texture combinations while respecting the natural beauty of simple ingredients. I started baking bread after visiting The Mill in San Francisco. Here, bakers visibly mixed, shaped, and baked sourdough breads right before the customers eyes. Bread baking was a natural progression of my existing passion for food, creating endless flavor combinations.
