Since 1982 Mozzarella Company has grown from producing only Fresh Mozzarella to producing a long and varied line of over 25 specialty cheeses. Over the years our cheeses have won many awards. Our cheeses have become famous for their quality and taste. They are featured in restaurants and gourmet shops across the country. Despite our company’s growth, each cheese is still made by hand from fresh milk in our tiny factory near downtown Dallas. The Mozzarella Company is known internationally for their high quality, award-winning cheeses. When you shop at Mozzarella Company, you can look into the cheese factory where employees are making cheese. Their cheeses made from fresh cow’s milk and goat’s milk. Among the cheeses sold are: Fresh Mozzarella, Bocconcini, Capriella (goat’s milk mozzarella), Burrata, Mozzarella Rolls, Mozzarella Curd, Smoked Mozzarella, Cream Cheese, Creme Fraiche, Ricotta, Mascarpone, Mascarpone Tortas, Queso Fresco, Queso Blanco, Queso Blanco with Chiles and Epazote, Queso Oaxaca, Smoked Scamorza, Crescenza, Fresh Goat Cheese. From her love of Italy Paula Lambert built a business that has flourished for 31 years. In the late 1960’s Paula spent five years in Italy studying Italian an art history, and she was smitten with everything Italian. Once back in Texas she wanted to find a way to return to visit Italy more often, so she decided to create a business that would afford her this wish. She decided that the business should focus on the something she loved … and that was food, specifically fresh mozzarella so she could have her beloved Insalata Caprese in Dallas. She named her business Mozzarella Company and began producing handmade fresh mozzarella. As the years have progressed Paula has created many delicious cheeses.
