Aya Fukai is the owner and pastry chef at Aya Pastry.
Upon moving to Chicago, Fukai worked at RIA and Balsan in Chicago’s Elysian Hotel, now the Waldorf Astoria Chicago. She was part of the team to earn two Michelin stars at RIA. She moved on in 2014 to create desserts for another two Michelin starred-restaurant, Sixteen. Most recently, Fukai was the executive pastry chef at steakhouse Maple & Ash.With an array of accolades under her belt, including Eater National’s Pastry Chef of the Year (2016), James Beard Outstanding Pastry Chef semi-finalist (2017), and Chicago Tribune’s Pastry Chef of the Year (2018), Fukai is committed not just to building a local bakery, but a community.
