It’s hard to find good food. If you’re stubborn enough, you do it yourself. After moving to Austin over 10 years ago, working in fine restaurants and providing poultry to them, we decided to start the farm in order to produce consistent quality meats. We believe in traditional practices such as using the entire animal and producing real flavor, not tasteless chicken breasts. We do not use the Cornish Cross (the industrial meat bird), and only use heritage breeds. The animals have 7 acres to forage and are supplemented with our own feed formula, and then we process on site in our processing plant, which causes less stress for the animals. We do not use any pesticides, hormones, or antibiotics.

Sebastien hails from Bordeaux, France where he grew up on his father’s farm. His dream in Texas is to bring old-world methods to Austin such as using the whole animal (nose-to-tail) and bringing animals that are not otherwise found here to foodies and chefs. He believes in the true flavor of poultry, and not conforming to what food has become in the U.S.: fast, tender and tasteless. Most people use the Cornish Cross, the fast-growing hybrid industrial meat bird, but he uses the French Naked Neck breed. He processes the birds quickly and humanely, and finished each one expertly. He has a great crew that helps feed & water the birds, process them, and take them to market.
