Olivina produces quality extra virgin olive oil from six different cultivars of olives, which have specific flavor profiles to each of them. Our extra vrigin olive oils are certified to ensure the customer that they are getting local fresh quality EVOO. Our family has owned the Olivina since the 1930’s and in 2000 we planted additional olive trees, where now have approximately 11,000 trees on the property. We oversee the trees while living among the orchard and mill the olives on-site. Each of the olive oils produce a different flavor profile, where some are used for items such as drizzling over vegetables, cooking fish and then the more robust oils more for pasta, poulty and salads. Julius Paul Smith established Olivina in 1881, where he planted olive trees (now producing our Century Mission olive oil), along with vineyards, almonds, walnuts, etc. The name originated from “olives” and “vines” to Olivina. Mr. Smith and his brother established Borox soap and then created Olivina here in Livermore. The Crohare family purchased a large portion of the original Olivina estate in the late 1930’s and raised cattle among the olive trees. Then in 2000 we planted additional trees and now have approximately 11,000 trees. Our family lives on the estate, takes care of the orchard and operates the state of the art olive mill.

Charles F. Crohare is the third generation of the Crohare family in Livermore and oversees the Olivina from the irrigation of the trees to the milling of the olives.Fourth generation, Charles T. Crohare, assists with the operation and runs the Alfa Laval olive mill during the harvest season.
Our fifth generation is involved in the operation where ever is needed.
