Hay J’s Bistro – Established 2006 In the winter of 2005 chef Patrick Fechser and lifelong restauranteur Rhonda Entner shared a vision together. A vison that entailed simple yet amazing food, hospitable service, and a wine & cocktail selection that would cater to all. In May of 2006 the mother and son partnership opened Hay J’s Bistro. Eau De Vie Wine Shoppe – Established 2011 In September of 2011 Hay J’s Bistro expanded their business right next door with Eau De Vie Wine Shoppe. Not only a wine shoppe, but a full service wine & beer venue with appetizers & salads served fresh from Hay J’s Bistro. So come in, relax and let us pour you a glass of our fine boutique style wines. The Butcher Block – Established 2014 In February 2014 the expansion continues with the opening of a family friendly, neighborhood style butcher shoppe. Located just 2 doors down from Hay J’s Bistro & right next door to Eau De Vie!

Patrick came to the spokane area in 1990 as a teenager with his family.. Soon after he began his lifelong venture into the world of restaurants. As a 15 year old Pat started his first job, washing dishes at Percys Restaurant in Spokane Valley. With a strong work ethic and a nack for culinary creativity, Patrick climbed the ladder quickly, taking over the kitchen in his early 20′s…
After nearly 15 yrs of calling Percys home, Patrick and his mother, Rhonda opened HayJ’s Bistro in May of 2006. Pounding into his employees the importance of consistency and perfection, Patrick has built a culinary environment suited to please all different cravings and desires.
When he has time away from the restaurant Patrick can be found spending time with his children Hayley and Jackson or on the nearest softball field or racquetball court.
