Aaron has over 20 years farming experience. While a delegate at a producer’s conference in Italy he was introduced to regional prosciutto made from heritage pigs fattened on acorns. Returning to Oregon inspired, Tails & Trotters was started with the goal of producing world-class prosciutto from pigs fattened on hazelnuts – a true reflection of the NW.
