Now open to the public five days a week, Public Smokehouse is a showroom and market where guests can stock up on Smoking Goose meat treats at wholesale pricing plus pick up new limited releases, seasonal specials, and pairings including Smoked Seafood, Farmstead Cheeses, pickles, preserves, tinned seafood, crackers, snack packs, and more. Mollie and Chris Eley are Indy natives (and high school sweethearts) who worked in kitchens near and far before coming back home to open their neighborhood butcher shop, Goose the Market in 2007. With early praise in Bon Appetit and New York Times, the Eleys grew their homegrown recipes and local farm partnerships into Smoking Goose in 2011. Their USDA-inspected meatery makes over 40 varieties of bacon, sausages, salumi, and smoked meats for wholesale distribution nationwide.
