Mary Collazo is the typical corporate-gone-rogue warrior. Working for the nations largest health insurer for 13 years, she felt stifled and stuck. Always having a passion for all things culinary, she decided to go back to school, with a specific focus in chocolate. She completed Professional Chocolatiering courses at Ecole Chocolat in 2012 and immediately got to work on recipe development, with the goal of opening a quaint chocolate boutique. A frequent visitor at San Antonio’s food truck parks, Collazo noticed there were no dessert options – a sad state of affairs for a gal that craves dessert after each meal. And then the absurd idea was born – chocolate food truck! The unique concept has been going strong for over two years and continues to innovate. In 2015, Collazo opened her first brick and mortar chocolate shop on Lackland AIr Force Base. In 2016, Chocollazo’s flagship boutique opened in Alamo Heights, in the Boardwalk on Broadway, located next to the Witte Museum.Frank C.

Frank Collazo is co-owner and lends his last name to the business’ play on words moniker. Frank also left his corporate gig at an engineering firm to grow his chocolate shop. Frank handles the important stuff like accounting and heavy box lifting. When Frank isn’t helping the chocolatier in the kitchen, he is refereeing professional Mixed Martial Arts (MMA) bouts as a licensed combat sports ref. Cool!No Records Found
