Canelés: A Bordeaux original, our recipe uses milk, eggs, flour, and sugar with a hint of rum and vanilla for flavor. We are the only patisserie in Pittsburgh to offer these. Husband and wife, Fred and Lori Rongier, co-own Gaby et Jules with their third partner, and Master Pastry Chef, David Piquard.Fred, born in Paris, met his wife Lori while attending university in the states and the two of them later met Chef Piquard.
The trio soon realized Fred and David’s grandfathers’ unfulfilled dreams of opening a patisserie in France. After years of hard work and planning, their dream finally became a reality.
